Easy Lemon Chicken Tortellini Salad

Cheese tortellini, cooked chicken, fresh vegetables, herbs, and Parmesan are tossed with a bright homemade lemon-Dijon dressing. This colorful salad is ready quickly and tastes even better after a short chill.

Ingredients
  

Salad
  • 20 ounces Refrigerated cheese tortellini
  • 2 cups Cooked chicken, chopped or shredded
  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, diced
  • 1/2 small Small red onion, thinly sliced or finely diced
  • 1/2 cup, optional Pitted Kalamata or black olives
  • 1/4 cup Fresh parsley, chopped
  • 2 tablespoons, optional Fresh basil, chopped
  • 2 cups, optional Baby spinach or mixed greens
  • 1/3 cup, optional Grated Parmesan cheese
Lemon Dressing
  • 1/3 cup Extra-virgin olive oil
  • 1/4 cup Fresh lemon juice
  • 1 teaspoon Finely grated lemon zest
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Honey
  • 1 clove Garlic, minced
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Freshly ground black pepper

Method
 

Step-by-Step
  1. Bring a large pot of salted water to a boil. Cook the refrigerated tortellini according to the package directions, usually about 3–7 minutes, until just tender; the full cooking process generally takes about 8–12 minutes when boiling and draining are included.
  2. Drain the tortellini well and rinse briefly under cold water to stop the cooking. Toss it with a small amount of dressing or olive oil, then cool completely so the pasta does not stick.
  3. Whisk the olive oil, lemon juice, lemon zest, Dijon mustard, honey, garlic, kosher salt, and black pepper in a small bowl. You can also place everything in a jar with a tight-fitting lid and shake until combined.
  4. Add the cooled tortellini, chicken, cherry tomatoes, cucumber, red onion, olives, parsley, basil, and spinach, if using, to a large bowl.
  5. Pour the dressing over the salad and toss gently until the ingredients are evenly coated. Add Parmesan, if desired, and refrigerate for 30 minutes before serving.
  6. Toss the salad again immediately before serving. If it needs refreshing after chilling, stir in the reserved 1–2 tablespoons of dressing.

Notes

Do not overcook the tortellini. Slightly firm tortellini holds up best after chilling. Cool the pasta fully before adding greens and dressing. Reserve 1–2 tablespoons of dressing to refresh the salad before serving.
