- Heat the oven to 350°F and grease a 9-by-13-inch baking dish or similar 2-quart casserole dish.
- Cook the egg noodles in salted water until just barely tender according to the package directions. Drain them well so excess water does not thin the casserole.
- In a large bowl, stir together the condensed cream of mushroom soup, sour cream, milk, black pepper, and about 3/4 cup of the shredded cheddar cheese.
- Add the cooked noodles, diced ham, thawed peas, and finely chopped onion to the bowl. Stir gently until the sauce coats the noodles and the ingredients are evenly distributed.
- Transfer the mixture to the prepared baking dish and spread it into an even layer.
- Combine the breadcrumbs with the melted butter, then sprinkle the mixture over the casserole. Finish with the remaining 1/4 cup cheddar cheese.
- Bake the casserole uncovered for 25–30 minutes, until it is hot and bubbling and the breadcrumb topping is lightly browned.
- Let the casserole rest for about 5 minutes before serving. This short rest helps the creamy sauce settle around the noodles.
Notes
Do not overcook the noodles because they continue softening in the oven. Ham, condensed soup, and cheese already contain salt, so taste the sauce before adding any more. Thaw and drain the peas, and drain excess liquid from any added vegetables. Store leftovers covered in the refrigerator and reheat until hot.
