Easy Keto Whipped Cream Strawberry Dessert

A no-bake keto dessert made with fresh strawberries and vanilla-sweetened whipped cream. This simple recipe makes about four servings and is ready in 10 to 15 minutes, with optional chilling for 30 minutes to 1 hour.

  • 2 cups Fresh strawberries, hulled and sliced
  • 1 cup Cold heavy whipping cream
  • 2 tablespoons Powdered erythritol, powdered allulose, or another keto powdered sweetener
  • 1 teaspoon Vanilla extract
  • 1 small pinch Salt

Step-by-Step
  1. Wash, hull, and slice the strawberries. Reserve a few attractive slices for garnishing the finished dessert.
  2. Place the cold heavy cream, powdered sweetener, vanilla extract, and optional pinch of salt in a chilled mixing bowl.
  3. Whip the mixture on medium-high speed until medium-stiff peaks form. Stop as soon as the cream holds its shape so it does not become grainy.
  4. Fold in about half of the sliced strawberries, or layer the strawberries and whipped cream in small serving glasses.
  5. Top with the remaining berries and serve immediately. Alternatively, refrigerate the portions for up to several hours before serving.

Notes

Chill the bowl and beaters for 10 to 15 minutes before whipping, and use very cold cream. Powdered sweetener dissolves more smoothly than granulated erythritol. Taste the cream before adding all the sweetener because strawberry sweetness varies.
