Total Time 3 minutes
Servings: 4 servings

Ingredients

Main Ingredients
  • 1 package (0.3 oz/8.5 g) Sugar-free orange or orange-tangerine gelatin
  • 1 cup Boiling water
  • 1 cup Cold water, preferably with a few ice cubes
  • 1 cup Cold heavy whipping cream
Optional Flavoring
  • 1/2 teaspoon Orange extract
  • 1-2 tablespoons Powdered keto sweetener

Method

Step-by-Step
  1. Place the sugar-free orange gelatin in a medium bowl. Pour in the boiling water and whisk for 1–2 minutes, until every gelatin crystal has dissolved.
  2. Add the cold water and stir well. If using ice cubes, continue stirring until the mixture is cool and the ice has melted.
  3. Refrigerate the gelatin for approximately 45–60 minutes, checking it near the end of the chilling time. It should be partially set with the consistency of thick syrup or soft pudding, not fully firm.
  4. Whip the cold heavy cream to medium-stiff peaks. Add the orange extract and powdered keto sweetener, if using, and mix briefly to combine.
  5. Beat the partially set gelatin briefly with a hand mixer until smooth and slightly airy. Gently fold in the whipped cream, or mix on low speed only until the two mixtures are combined.
  6. Spoon the mixture into four dessert glasses or one serving bowl. Smooth the tops if desired, then refrigerate for 1–2 hours, until fully set and fluffy.
  7. Serve cold with a small spoonful of unsweetened whipped cream or a little grated orange zest. Keep the dessert chilled until serving for the best texture.

Notes

Cool the gelatin before adding whipped cream because warm gelatin can deflate the cream and create a loose, watery dessert. If the gelatin becomes firm, let it sit briefly at room temperature and beat it smooth before folding in the cream. Use orange extract or a little orange zest instead of orange juice to keep added carbohydrates low, and avoid regular gelatin mixes containing sugar.
