  • 1 package (0.3 ounce/8.5 g) Sugar-free orange gelatin
  • 1 cup Boiling water
  • 1/2 cup Cold water
  • 8 ounces (226 g) Full-fat cream cheese, softened
  • 1/4 cup Powdered keto sweetener, such as powdered erythritol or monk-fruit/erythritol blend
  • 1 teaspoon Orange extract
  • 1 cup (240 ml) Cold heavy whipping cream
Optional Add-Ins
  • 1/4 cup Finely chopped pecans
  • 1/2 teaspoon Finely grated orange zest

Method
 

Step-by-Step
  1. Place the sugar-free orange gelatin in a mixing bowl. Pour in the boiling water and whisk until every grain of gelatin has dissolved.
  2. Stir in the cold water, then let the gelatin mixture cool for several minutes. It should feel cool but remain liquid rather than beginning to set.
  3. In a separate bowl, beat the softened cream cheese, powdered keto sweetener, and orange extract until completely smooth. Scrape the sides of the bowl so the mixture is evenly blended.
  4. Slowly beat the cooled orange gelatin into the cream cheese mixture. Continue mixing just until the color and texture are uniform.
  5. In another chilled bowl, whip the cold heavy cream to medium-stiff peaks. Stop mixing when the cream holds its shape but still looks smooth and creamy.
  6. Gently fold the whipped cream into the orange mixture using a spatula. Fold in the chopped pecans and orange zest, if using, without stirring vigorously.
  7. Spoon the orange fluff into one serving bowl or six individual dishes. Cover and refrigerate for at least 1 hour, or until thick and fluffy; chilling overnight creates an even firmer texture.

Notes

Let the gelatin cool before combining it with the cream cheese, and whip the heavy cream separately before folding it in. Store covered in the refrigerator and serve chilled.
