  • 1 cup (226 g) Unsalted butter, softened
  • 1/2 cup (100 g) Granulated sugar
  • 1 Large egg
  • 1 teaspoon Vanilla extract
  • 1 small 3-ounce box (85 g) Flavored Jell-O gelatin powder

  • 2 1/2 cups (300 g) All-purpose flour
  • 1 teaspoon Baking powder

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream the softened butter and granulated sugar until smooth and light. Beat in the egg and vanilla extract.
  3. Add the flavored gelatin powder and mix until it is evenly distributed throughout the butter mixture.
  4. Whisk the flour and baking powder together, then gradually mix the dry ingredients into the butter mixture just until a soft dough forms.
  5. If the dough feels sticky, chill it for 20–30 minutes. Scoop about 1 tablespoon per cookie, roll into balls, and place them about 2 inches apart on the prepared sheets.
  6. Flatten each dough ball lightly with the bottom of a glass or a fork, if desired. Bake at 350°F for 8–10 minutes, removing the cookies while they are set but still pale.
  7. Cool the cookies on the baking sheet for about 5 minutes, then transfer them to a wire rack to finish cooling.

Notes

Use softened, not melted, butter to help prevent excessive spreading. Do not use unflavored gelatin because regular flavored gelatin provides both the fruity taste and the color. The cookies continue cooking on the hot baking sheet, so avoid waiting for them to brown.
