- Heat the olive oil in a large Dutch oven or soup pot over medium-high heat. Add the sausage and cook for 5–7 minutes, breaking it into small pieces, until browned and no longer pink; remove excess fat if necessary.
- Add the diced onion and cook for about 4 minutes, until softened. Stir in the garlic and cook for 30–60 seconds, just until fragrant.
- Pour in the chicken broth, then add the drained beans, diced tomatoes with their juice, Italian seasoning, red pepper flakes if using, salt, and black pepper. Stir well and bring the soup to a boil.
- Reduce the heat and simmer the soup uncovered for 12–15 minutes. For a thicker texture, mash approximately 1/2 cup of the beans against the side of the pot.
- Stir in the spinach and cook for 1–2 minutes, just until wilted. Taste and adjust the seasoning, then serve with finely grated Parmesan.
Notes
For a thicker soup, mash some of the beans before adding the spinach. Hot Italian sausage or red pepper flakes add more heat, while Parmesan may reduce the need for extra salt. Store leftovers in the refrigerator and reheat gently.
