Easy Instant Pot Pork Chops Recipe

Ingredients
  

Pork Chops and Seasoning
  • 4 pork chops Boneless or bone-in pork chops, about 1 inch thick
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • 1/2 teaspoon Onion powder
For Searing and Cooking
  • 2 tablespoons Olive oil
  • 1 cup Low-sodium chicken broth
  • 1 tablespoon Worcestershire sauce
Gravy
  • 1 tablespoon Cornstarch
  • 2 tablespoons Cold water
Garnish
  • 1 tablespoon Fresh parsley, chopped

Method
 

Step-by-Step
  1. Pat the pork chops dry. Combine the kosher salt, black pepper, paprika, garlic powder, and onion powder, then season both sides of every chop.
  2. Set the Instant Pot to Sauté and add the olive oil. Sear the pork chops in batches for about 2 minutes per side, then transfer them to a plate.
  3. Pour the chicken broth and Worcestershire sauce into the pot. Scrape the bottom thoroughly to loosen all browned bits and help prevent a Burn warning.
  4. Return the pork chops to the Instant Pot. Lock the lid, select High Pressure, and cook for 8 minutes for approximately 1-inch chops, or 10 minutes for thicker or bone-in chops.
  5. Allow a natural pressure release for 10 minutes, then carefully release any remaining pressure. Check the thickest part of the pork with a thermometer and confirm it reaches at least 145°F.
  6. Remove the pork chops and let them rest for 3 minutes. Select Sauté, whisk the cornstarch with the cold water, stir the slurry into the pot liquid, and simmer for 1 to 2 minutes until thickened.
  7. Spoon the gravy over the rested pork chops and sprinkle with the optional chopped fresh parsley. Serve immediately while the sauce is hot.

Notes

Sear in batches for better browning, and always deglaze the pot thoroughly after searing. Use a meat thermometer because pork chops can become dry if overcooked; very thin chops may need only 5 to 6 minutes of pressure cooking.
