- Heat the oven to 350°F (175°C) and lightly grease a small 1- to 1 1/2-quart baking dish.
- Beat the softened cream cheese and mayonnaise together until smooth and creamy.
- Stir in the freshly shredded Cheddar, Monterey Jack or pepper Jack, drained pimentos, garlic powder, onion powder, cayenne pepper, kosher salt, and black pepper.
- Spread the mixture evenly in the prepared baking dish.
- Bake for 20 to 25 minutes, until the dip is hot, melted, and bubbling around the edges.
- For a lightly browned top, broil for 1 to 2 minutes while watching carefully. Serve immediately with crackers, chips, toasted baguette slices, celery, or other vegetables.
Notes
Shred cheese from a block for the smoothest melt. Drain the pimentos thoroughly and soften the cream cheese before mixing. Refrigerate leftovers and reheat gently until warm.
