- If the chicken breasts are thick, pound them to an even 1/2- to 3/4-inch thickness. Whisk the honey, lime juice, soy sauce, olive oil, garlic, chili powder, kosher salt, and black pepper together in a bowl.
- Reserve a few tablespoons of the marinade for brushing or serving, if desired. Place the chicken in the remaining marinade, cover, and refrigerate for 15 to 30 minutes.
- Heat a lightly oiled skillet over medium-high heat, or preheat a grill to medium-high. Remove the chicken from the marinade and discard the marinade that touched the raw chicken.
- Cook the chicken for approximately 5 to 8 minutes per side, depending on thickness, until browned and the thickest part reaches 165°F (74°C). Watch closely because honey can brown quickly.
- Transfer the cooked chicken to a plate and let it rest for 5 minutes. Spoon over the reserved sauce and garnish with lime zest or chopped cilantro before serving.
Notes
Fresh lime juice provides the brightest flavor. Do not reuse marinade that has contacted raw chicken unless it is boiled first. Chicken thighs may be substituted and usually need about 6 to 8 minutes per side, depending on size.
