Step-by-Step
- Heat the oven to 375°F (190°C). Line a large baking sheet with foil, using a second sheet if needed to create a fully sealed packet.
- Pat the salmon dry and place it skin-side down in the center of the foil. Season the fillet with the salt and black pepper.
- Whisk together the honey, melted butter, minced garlic, lemon juice, and olive oil. Pour most of the sauce over the salmon and reserve a small amount for brushing after baking.
- Fold the foil over the salmon and crimp the edges tightly to seal the packet. Bake for 15–18 minutes, depending on the thickness of the fillet.
- Carefully open the packet because hot steam will escape. Brush the salmon with the reserved sauce, then broil for 2–3 minutes if you want a lightly browned surface.
- Check that the salmon flakes easily and reaches about 145°F (63°C) in the thickest part. Garnish with parsley and serve with lemon wedges.
Notes
Tuck very thin tail sections underneath before sealing so they do not overcook. Watch the salmon continuously while broiling because the honey can scorch quickly. Some versions replace the melted butter with 2 tablespoons low-sodium soy sauce and use 1/4 cup honey for a saltier, less buttery glaze.
