- Pat the chicken dry and cut it into evenly sized 1-inch pieces. Season with kosher salt, black pepper, and paprika, then toss with cornstarch until lightly coated.
- Whisk together the honey, low-sodium soy sauce, minced garlic, vinegar, and optional red pepper flakes in a small bowl.
- Heat the oil in a large skillet over medium-high heat. Arrange the chicken in a single layer and cook in batches if necessary.
- Cook the chicken for about 3-4 minutes per side, turning until golden brown and the thickest pieces reach 165°F (74°C).
- Reduce the heat to medium-low, add the butter, and pour in the honey garlic sauce. Simmer for 1-3 minutes, tossing often, until the sauce thickens slightly and coats the chicken.

Notes
