- Heat the oven to 425°F. Line a baking sheet with parchment paper and lightly grease it.
- Roll the pizza dough on a lightly floured surface into a thin rectangle approximately 1/8 inch thick. Cut it into roughly 3-inch squares or circles.
- Place about 1 teaspoon of pizza sauce, a small amount of mozzarella, and a little chopped pepperoni in the center of each dough piece. Avoid overfilling.
- Fold the dough over the filling and pinch the edges firmly to seal. Crimp the edges with a fork if desired, then arrange each roll seam-side down on the prepared baking sheet.
- Whisk the egg with the water and brush it over the tops. Sprinkle with Italian seasoning, garlic powder, and optional Parmesan cheese.
- Bake for 12–15 minutes, until the rolls are puffed and golden brown. Let them cool for several minutes before serving with warm pizza sauce.
Notes
Low-moisture mozzarella and a small amount of sauce help prevent leaks. Rest assembled rolls for 5 minutes before baking, and place them seam-side down. For a crispier exterior, bake on a preheated sheet or air fry at 375°F for approximately 6–8 minutes.
