- Heat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Roll the pizza dough into an approximately 10 x 14-inch rectangle and transfer it to the prepared baking sheet.
- Spread the pizza sauce down the center third of the dough, leaving the top and bottom edges clear. Add the mozzarella, pepperoni, Parmesan, and any optional toppings.
- Cut diagonal strips about 1 inch wide into both sides of the dough, stopping at the filling. Keep the top and bottom sections intact.
- Fold the top and bottom dough over the filling, then cross the side strips over the center in an alternating pattern. Tuck or pinch the ends closed.
- Brush the braid with beaten egg and sprinkle it with Italian seasoning and optional garlic powder.
- Bake for 18 to 25 minutes, until golden brown and the cheese is melted. Rest for 5 minutes, garnish with parsley or basil if desired, and slice.
Notes
Use low-moisture mozzarella and avoid excess sauce or watery vegetables. If the assembled braid becomes difficult to handle, chill or briefly freeze it for 10 to 15 minutes before baking. For a softer, richer crust, brush the baked braid with melted garlic butter.
