- Pat the chicken dry and cut it into bite-size, 1-inch pieces. For a softer, processed-style nugget, briefly pulse the chicken in a food processor and shape it into small portions.
- In a shallow bowl, stir together the finely crushed pork rinds, Parmesan, paprika, garlic powder, onion powder, salt, and black pepper.
- Beat the egg in a second shallow bowl. Dip each chicken piece into the egg, then press it firmly into the pork-rind mixture until well coated.
- Heat the avocado oil or olive oil in a large skillet over medium heat. Arrange the coated chicken in a single layer without overcrowding the pan.
- Pan-fry for about 5–7 minutes per side, turning once, until the coating is golden brown and the thickest nugget reaches 165°F (74°C) internally.
- Transfer the cooked nuggets to a paper-towel-lined plate to absorb excess oil. Serve hot with a low-carb dipping sauce or your preferred keto side dish.
Notes
Crush the pork rinds very finely so the coating adheres well and browns evenly. Do not overcrowd the skillet or air-fryer basket. For an oven version, bake on a parchment-lined sheet at 425°F (220°C) for 18–22 minutes, turning halfway through. For an air fryer, cook at 400°F (200°C) for 10–12 minutes, turning halfway through, and lightly spray the coated nuggets with oil.
