Easy Homemade Granola Bars

Chewy homemade granola bars made with toasted oats, almonds, coconut, wheat germ, dried fruit, honey, and brown sugar. This recipe makes about 12–16 bars for convenient breakfasts and snacks.

Ingredients
  

Granola Bar Mixture
  • 2 cups Old-fashioned rolled oats
  • 1 cup Sliced almonds
  • 1 cup Shredded coconut, loosely packed
  • 1/2 cup Toasted wheat germ
  • 1 cup Small-diced dried fruit, such as cranberries, apricots, or cherries
Honey Binder
  • 3 tablespoons Unsalted butter
  • 2/3 cup Honey
  • 1/4 cup Light brown sugar, lightly packed
Flavoring
  • 1 1/2 teaspoons Pure vanilla extract
  • 1/4 teaspoon Kosher salt

Method
 

Step-by-Step
  1. Heat the oven to 350°F. Butter an 8-by-12-inch baking pan and line it with parchment paper, leaving enough overhang to lift out the cooled slab.
  2. Spread the oats, sliced almonds, and shredded coconut on a sheet pan. Toast for 10–12 minutes, stirring once or twice, until lightly golden, watching carefully because the coconut and almonds can brown quickly.
  3. Reduce the oven temperature to 300°F. Transfer the toasted oats, almonds, and coconut to a large bowl, then stir in the toasted wheat germ.
  4. Warm the butter, honey, and lightly packed brown sugar in a saucepan over medium heat until the butter melts and the sugar dissolves. Remove the saucepan from the heat and stir in the vanilla extract and kosher salt.
  5. Pour the warm syrup over the oat mixture. Add the small-diced dried fruit and mix thoroughly so the binder coats the grains, nuts, coconut, and fruit.
  6. Transfer the mixture to the prepared pan and press it down firmly and evenly with a spatula, the bottom of a measuring cup, or lightly dampened hands. Bake at 300°F for 25–30 minutes, until lightly golden.
  7. Cool the granola completely in the pan for 2–3 hours. Lift it out using the parchment overhang and cut into about 12–16 bars.

Notes

Press the mixture very firmly into the pan to help prevent crumbling. Do not cut the bars while warm; complete cooling allows the honey-sugar binder to set. For softer, chewier bars, remove them from the oven when lightly golden rather than deeply browned.
