- In a medium saucepan, whisk together the granulated sugar, unsweetened cocoa powder, cornstarch, and fine salt. Gradually whisk in the whole milk and heavy cream until the mixture is smooth and no dry pockets remain.
- Place the saucepan over medium heat and cook for 5 to 8 minutes, whisking frequently. Continue cooking for about 1 minute after the mixture reaches a gentle boil, when it has thickened enough to coat the whisk.
- Remove the saucepan from the heat and immediately add the finely chopped chocolate. Stir until every piece has melted and the mixture is completely smooth, then stir in the vanilla extract.
- Pour the warm chocolate mixture into popsicle molds, leaving a little space at the top for expansion. Insert the sticks while the mixture is still fluid.
- Freeze the fudgesicles until firm, for at least 6 hours and preferably overnight. To unmold, briefly run the outside of each mold under warm water and gently pull on the stick.
Notes
Whisk the dry ingredients before adding the milk and cream to help prevent lumps. Use good-quality chocolate for the smoothest texture and strongest flavor. Warm the molds briefly for an easier release instead of pulling hard on the sticks.
