Easy Homemade Fresh Tomato Soup Recipe

A comforting soup made with ripe fresh tomatoes, onion, garlic, basil, and broth. Blend it smooth and finish with optional heavy cream for a rich, silky dinner.

  • 1 medium Medium yellow onion, diced
  • 3 cloves Garlic cloves, minced
  • 3 pounds Ripe fresh tomatoes, cored and roughly chopped
  • 2 cups Chicken or vegetable broth
Seasonings
  • 1 teaspoon, plus more to taste Kosher salt
  • 1/2 teaspoon Freshly ground black pepper
  • 1 teaspoon Granulated sugar, optional
Fresh Herbs
  • 1/4 cup, plus extra for garnish Fresh basil leaves
Optional Finish
  • 1/2 cup Heavy cream
For Serving
  • As needed Crusty bread, croutons, Parmesan, or olive oil

Method
 

Step-by-Step
  1. Heat the olive oil or butter in a large pot over medium heat. Add the diced onion and cook for 5–7 minutes, stirring occasionally, until softened but not browned.
  2. Add the minced garlic and cook for 30–60 seconds, stirring constantly, until fragrant. Do not let the garlic become deeply browned, as it can turn bitter.
  3. Add the chopped tomatoes, broth, kosher salt, black pepper, and optional sugar to the pot. Bring the mixture to a gentle boil.
  4. Reduce the heat, partially cover the pot, and simmer for 25–30 minutes. Continue until the tomatoes are very soft and the broth has taken on a rich tomato flavor.
  5. Stir in the fresh basil leaves. Blend the soup until smooth with an immersion blender, or carefully blend it in batches in a countertop blender with the lid vented to release steam.
  6. Return the blended soup to the pot and stir in the heavy cream, if using. Warm gently without boiling, then taste and adjust the salt, pepper, and acidity.
  7. Ladle the soup into bowls and finish with fresh basil, Parmesan, olive oil, croutons, or toasted crusty bread. Serve hot.

Notes

Use fully ripe, flavorful tomatoes for the best taste. If the tomatoes are watery, simmer the soup uncovered for a few extra minutes before blending. Add cream only after blending and do not boil the soup afterward. For a restaurant-style texture, strain the blended soup through a fine-mesh sieve to remove seeds and skins.
