- Whisk the flour, baking powder, and salt together in a medium bowl.
- Cut in the cold butter with a pastry cutter or your fingertips until the mixture resembles coarse crumbs. A few small visible pieces of butter are perfectly fine.
- Pour in the milk and stir only until a soft, slightly sticky dough forms. Do not knead or vigorously mix the dough.
- Bring approximately 6 cups of chicken broth, soup, or stew to a gentle simmer. Drop the dough into the liquid by rounded tablespoonfuls, leaving a little space between each dumpling.
- Cover the pot tightly and simmer gently for about 15 minutes. Keep the lid closed so the trapped steam can cook the dumplings until light and fluffy.
- Cut one dumpling open to check that the center is fluffy and cooked through. Serve the dumplings immediately with the soup or stew.
Notes
Avoid overmixing, since working the dough too much can make dumplings dense and chewy. Keep the pot covered while cooking and maintain a gentle simmer rather than a vigorous boil. For softer, larger dumplings, use 1 cup of milk.
