- Chill a mixing bowl and the beaters for 10–15 minutes if possible. Pour the cold heavy whipping cream into the chilled bowl, then add confectioners’ sugar, vanilla extract, ground cinnamon, and the optional pinch of salt.
- Beat with an electric mixer on medium speed until soft peaks form. Increase the speed to medium-high and continue beating just until medium or stiff peaks form, stopping promptly so the cream stays smooth.
- Serve the cinnamon whipped cream immediately, or cover and refrigerate it for up to about 4 hours. If it loses a little volume, briefly whisk it before serving.
Notes
Use very cold cream, bowl, and beaters for faster whipping and a more stable texture. For milder cinnamon flavor, use 1/4 teaspoon; for a stronger cinnamon taste, use up to 1 teaspoon. Do not overbeat, because the cream can become grainy and eventually turn into butter.
