- Heat the oven to 375°F and lightly butter or spray a 9-inch square baking dish or similar 2-quart baking dish.
- Combine the cherries, 3/4 cup sugar, cornstarch, lemon juice, vanilla extract, and 1/4 teaspoon salt. Transfer the fruit mixture to the prepared baking dish.
- Whisk the flour, 1/2 cup sugar, baking powder, and 1/4 teaspoon salt in a bowl. Cut in the cold butter with a pastry cutter or your fingertips until coarse crumbs form.
- Stir in the milk just until a soft dough forms, taking care not to overmix. Drop spoonfuls of dough over the cherries, leaving a few small gaps for steam to escape.
- Bake at 375°F for 35 to 40 minutes, until the topping is golden brown and the filling bubbles around the edges. Cool for at least 10 to 15 minutes before serving.
Notes
If using frozen cherries, thaw and drain them first. Add 1 to 2 teaspoons of extra cornstarch if the fruit is especially juicy. Keep the butter cold and mix the topping only until combined for the most tender texture.
