- Add the blueberries, sugar, 1/4 cup water, lemon juice, and salt to a small saucepan. Stir gently to combine.
- Bring the mixture to a gentle boil over medium heat, stirring occasionally. Reduce the heat and simmer for 5–7 minutes, until the berries soften and release their juices.
- Mash some of the berries with the back of a spoon for a smoother, thicker sauce while leaving some berries whole for texture.
- In a small bowl, stir the cornstarch with 2 tablespoons cold water until completely smooth. Slowly whisk the slurry into the simmering blueberries.
- Cook for 1–2 minutes, stirring constantly, until the sauce thickens and becomes glossy. Remove the saucepan from the heat and stir in the vanilla extract.
- Let the sauce cool briefly before serving. Remember that it will thicken further as it cools.
Notes
Frozen blueberries can be used without thawing and may require an extra 1–2 minutes of cooking time. Refrigerate the sauce in a covered container for up to 1 week, or freeze it for about 2–3 months. Reheat gently and add a splash of water if it becomes too thick.
