Easy Harvest Popcorn Snack Mix

A colorful, crunchy fall snack mix combining popcorn, pretzels, peanuts, candy corn, Reese's Pieces, and M&M's with a thin white chocolate coating. No oven is needed, and the finished treat sets at room temperature in about 20–30 minutes.

Ingredients
  

Snack Mix
  • 8 cups Plain popped popcorn, preferably lightly salted
  • 1 cup Mini pretzels
  • 1 cup Roasted salted peanuts
  • 1 cup Candy corn
  • 1 cup Reese's Pieces
  • 1 cup Fall-colored M&M's
Coating
  • 10 ounces White chocolate baking chips, vanilla melting wafers, or almond bark
  • 1 teaspoon Shortening or coconut oil, optional

Method
 

Step-by-Step
  1. Line a large baking sheet with parchment paper or wax paper. Make sure the sheet is large enough to spread the snack mix into an even layer once it has been coated.
  2. Add the popcorn, mini pretzels, roasted salted peanuts, candy corn, Reese's Pieces, and fall-colored M&M's to a very large bowl. Toss gently so the ingredients are distributed without breaking the popcorn.
  3. Place the white chocolate baking chips, vanilla melting wafers, or almond bark in a microwave-safe bowl. Microwave in 20–30-second intervals, stirring thoroughly after each interval, until smooth; stir in the shortening or coconut oil if the coating seems too thick.
  4. Drizzle half of the melted coating over the snack mixture and fold carefully with a spatula. Add the remaining coating and continue folding until most of the popcorn and other ingredients are lightly covered.
  5. Spread the coated mixture onto the lined baking sheet in an even layer. Separate large clusters gently, but avoid crushing the popcorn or pressing the candy pieces into the coating.
  6. Leave the tray at room temperature for 20–30 minutes, or until the white chocolate coating feels firm. Break the snack mix into bite-size clusters and transfer it to an airtight container.

Notes

Remove all unpopped popcorn kernels before mixing. Melt the coating gently, keep water away from it, and do not overheat it because white chocolate can seize. For lighter coverage, use 10 cups of popcorn instead of 8. Store the finished mix in an airtight container at room temperature.
