Easy Ham and Pineapple Salad

A creamy, cold ham salad made with diced cooked ham, canned pineapple, celery, onion, relish, and mustard. Serve it chilled on lettuce, with crackers, or as a sandwich filling.

  • 2 cups, about 8 ounces Fully cooked ham, finely diced
  • 1 cup Canned pineapple tidbits, well drained
  • 1/4 cup Celery, finely diced
  • 2 tablespoons Red or green onion, finely diced
  • 1 tablespoon, optional Sweet pickle relish
Dressing
  • 1/2 cup Mayonnaise
  • 1 teaspoon Yellow mustard or Dijon mustard
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Black pepper
For Serving
  • As needed Lettuce leaves, crackers, or sandwich bread

Method
 

Step-by-Step
  1. Drain the pineapple very well and pat it dry if it is especially juicy. Place the ham, pineapple, celery, onion, and optional relish in a mixing bowl.
  2. In a separate small bowl, stir together the mayonnaise, mustard, salt, and black pepper until smooth and evenly combined.
  3. Fold the dressing into the ham mixture until all of the ingredients are lightly and evenly coated. Cover the bowl and refrigerate for at least 30 minutes before serving.
  4. Serve the chilled salad on lettuce leaves, with crackers, or as a sandwich filling. If it seems dry after chilling, stir in a little more mayonnaise just before serving.

Notes

Thoroughly draining the pineapple is the most important tip for preventing watery salad. Uniformly dice the ham and vegetables for the best texture. Keep the finished salad covered and refrigerated, and use it within 3 to 4 days.
