Easy Ham and Bean Soup

A hearty dinner soup made with dried beans, ham, vegetables, garlic, and herbs. The beans become tender and naturally creamy while the ham adds a smoky, savory broth.

  • 1 pound Dried great northern beans or navy beans, rinsed and picked over
  • 8 cups Low-sodium chicken broth or water
  • 1 about 1½–2 pounds Meaty ham hock
  • 1 medium Yellow onion, diced
  • 2 medium Carrots, peeled and diced
  • 2 stalks Celery stalks, diced
  • 3 cloves Garlic, minced
Seasonings
  • 1 leaf Bay leaf
  • 1 teaspoon Dried thyme
  • ½ teaspoon Black pepper
  • ½ teaspoon Salt, added only as needed after cooking
Finishing
  • 1–2 tablespoons, optional Fresh parsley, chopped

Method
 

Step-by-Step
  1. Rinse and sort the dried beans, removing any small stones or damaged beans. Cover them generously with water and soak overnight for 8 hours, then drain and rinse before cooking.
  2. For a quick soak, place the beans in a pot of water and boil for 2 minutes. Remove the pot from the heat, cover, let the beans stand for 1 hour, then drain and rinse.
  3. Add the soaked beans, broth or water, ham hock, onion, carrots, celery, garlic, bay leaf, thyme, and black pepper to a large Dutch oven or soup pot. Stir gently to distribute the vegetables and seasonings.
  4. Bring the mixture to a boil, then reduce the heat to a gentle simmer. Cover the pot partially and cook for 1½–2½ hours, stirring occasionally, until the beans are completely tender.
  5. Remove the ham hock and bay leaf from the pot. Pull the ham meat from the bone, chop or shred it, and return the meat to the soup.
  6. Taste the soup only after the ham and beans are fully cooked, then add the salt if necessary. Stir in the chopped parsley just before serving, and add a little water or broth if the soup is thicker than desired.

Notes

For a naturally creamy soup, mash 1–2 cups of cooked beans against the side of the pot or blend a small portion and stir it back in. If using 2 cups cooked diced ham instead of a ham hock, add it during the last 20–30 minutes of simmering. Refrigerate leftovers promptly and reheat gently with a splash of broth or water.
