Method
 

Step-by-Step
  1. Heat the oven to 350°F. Line a 24-cup mini-muffin pan with paper liners or coat every cup thoroughly with nonstick cooking spray.
  2. Prepare the boxed brownie mix according to the package directions, usually combining the mix with 2 large eggs, 1/3 cup vegetable oil, and 2 tablespoons water. Stir only until the batter is smooth, and do not overmix.
  3. Fill each mini-muffin cup about two-thirds full. A small cookie scoop helps portion the batter evenly and keeps the brownie bites a similar size.
  4. Bake for 12–15 minutes, beginning to check at 11–12 minutes. The tops should look set, and a toothpick inserted in the center should come out with a few moist crumbs.
  5. Cool the brownie bites in the pan for about 5 minutes, then transfer them to a rack and cool completely before decorating.
  6. Add a small dab or swirl of frosting to each brownie bite. Finish with candy eyeballs, Halloween sprinkles, and orange, black, or green decorating icing.

Notes

Do not bake until the brownie bites are completely dry, since mini brownies can lose moisture quickly. For cleaner decorating, chill the cooled brownie bites for 15–20 minutes before adding frosting and candy.
