Easy Ground Turkey Goulash Recipe

A comforting American-style one-pot goulash made with ground turkey, vegetables, tomatoes, broth, and elbow macaroni. It is ready in about 40–45 minutes and makes 4–6 servings.

  • 1 14.5-ounce can Diced tomatoes, undrained
  • 1 15-ounce can Tomato sauce
  • 2 cups Low-sodium chicken broth
  • 2 cups, about 8 ounces Uncooked elbow macaroni
Seasonings
  • 1 teaspoon Sweet paprika
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Black pepper
Optional Toppings
  • 1 teaspoon Worcestershire sauce
  • 1/2-1 cup Shredded cheddar cheese

Method
 

Step-by-Step
  1. Heat the olive oil in a large deep skillet or Dutch oven over medium heat. Add the diced onion and green bell pepper, then cook for 4–5 minutes until the vegetables begin to soften.
  2. Add the ground turkey and cook for 5–7 minutes, breaking it into small crumbles with a spoon. Continue cooking until the turkey is no longer pink.
  3. Stir in the minced garlic and tomato paste. Cook for about 1 minute, stirring constantly, until the garlic is fragrant and the tomato paste is mixed into the turkey.
  4. Add the undrained diced tomatoes, tomato sauce, chicken broth, paprika, Italian seasoning, kosher salt, black pepper, and Worcestershire sauce if using. Stir well to combine.
  5. Bring the mixture to a boil, then stir in the uncooked elbow macaroni. Reduce the heat to medium-low, cover, and simmer for 12–15 minutes, stirring occasionally, until the pasta is tender.
  6. Remove the pot from the heat and let it stand uncovered for 3–5 minutes so the sauce can thicken. Taste and adjust the seasoning, then serve as-is or top with shredded cheddar cheese.

Notes

For the most tender result, use 93% lean ground turkey. If using 99% lean turkey, add 1 extra teaspoon of olive oil. Stir the macaroni every few minutes and remove the pot from the heat as soon as it is tender to prevent dry, overcooked goulash.
