- Heat the olive oil in a large skillet over medium heat. Add the finely diced onion and cook for 3 to 4 minutes, stirring occasionally, until softened.
- Add the ground chicken to the skillet and cook for 5 to 7 minutes, breaking it into small pieces with a spoon. Continue until the chicken is no longer pink and the thickest pieces reach 165°F (74°C).
- Stir in the minced garlic and cook for about 30 seconds, just until fragrant. Avoid cooking the garlic too long, since it can become bitter.
- Add the taco seasoning, chunky salsa, and water or low-sodium chicken broth. Stir well and simmer for 3 to 5 minutes, until the filling is saucy but not watery.
- Taste the chicken mixture and add the kosher salt only if needed. Finish with lime juice and chopped cilantro if desired.
- Warm the tortillas in a dry skillet, in the microwave, or wrapped in foil in a low oven. Fill the tortillas with the chicken mixture and add your favorite toppings before serving.
Notes
Ground chicken is lean and can dry out if cooked too long, so stop simmering once the filling is moist and the chicken has reached 165°F (74°C). Refrigerate leftover filling in a covered container and reheat gently with a small splash of water or broth.
