  • 8 ounces Cremini or white mushrooms, sliced
  • 1 medium Medium yellow onion, finely diced
  • 2 cloves Garlic, minced
  • 2 tablespoons Butter
  • 2 tablespoons All-purpose flour
  • 2 cups Beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard, optional
  • 1/2 teaspoon Paprika
  • 3/4 cup Sour cream
  • 8 ounces Wide egg noodles, cooked according to package directions
Seasoning and Garnish
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped

Method
 

Step-by-Step
  1. Cook the egg noodles in salted water until just tender. Drain and set aside, reserving about 1/2 cup pasta water if desired.
  2. Heat a large skillet over medium-high heat. Brown the ground beef and diced onion for 6–8 minutes, breaking the beef into small pieces, then drain excess fat if necessary.
  3. Add butter and sliced mushrooms to the skillet. Cook for 4–5 minutes, until the mushrooms soften and most of their liquid evaporates.
  4. Stir in the minced garlic and cook for about 30 seconds. Sprinkle in flour and stir continuously for 1 minute.
  5. Gradually stir in the beef broth, then add Worcestershire sauce, Dijon mustard, paprika, kosher salt, and black pepper. Simmer for 5–8 minutes until thickened.
  6. Reduce the heat to low. Stir a few spoonfuls of hot sauce into the sour cream, then return the mixture to the skillet and warm gently without boiling.
  7. Toss the sauce with the cooked egg noodles or spoon it over them. Finish with chopped parsley and serve immediately.

Notes

Brown the beef and mushrooms well for the best savory flavor. Do not boil after adding sour cream, or the sauce may separate. If the sauce becomes too thick, loosen it with reserved noodle water or a splash of beef broth.
