Easy Grilled Peach Caprese Salad

  • 4 medium ripe but firm peaches
  • 8 ounces fresh mozzarella, preferably ciliegine, bocconcini, or a large ball sliced into rounds
  • 1/2 cup fresh basil leaves
  • 2 tablespoons, plus more for brushing the grill extra-virgin olive oil
  • 2 tablespoons balsamic glaze
  • 1/2 teaspoon, or to taste kosher salt
  • 1/4 teaspoon freshly ground black pepper
Optional Additions
  • 2 cups baby arugula or mixed greens
  • 2 ounces thinly sliced prosciutto

Method
 

Step-by-Step
  1. Heat an outdoor grill or grill pan to medium-high, approximately 400–450°F. Brush the grates or pan lightly with olive oil so the peaches release cleanly.
  2. Halve the peaches and remove the pits. Pat the cut surfaces dry, then brush them lightly with olive oil.
  3. Place the peaches cut-side down on the hot grill. Cook without moving for about 3–4 minutes, until distinct grill marks develop and the peaches are slightly softened.
  4. Turn the peaches and grill them on the skin side for 1–2 minutes if desired. Transfer them to a plate and let them cool for a few minutes.
  5. Slice the grilled peaches into wedges. Arrange the mozzarella, peach wedges, and basil on a serving platter, adding arugula underneath or prosciutto between the slices if using.
  6. Drizzle with the remaining olive oil and balsamic glaze. Season with kosher salt and freshly ground black pepper, then serve immediately or at room temperature.

Notes

Choose fragrant peaches that are ripe but still firm. Dry the cut surfaces before grilling and avoid moving the fruit until grill marks form. Add basil and balsamic glaze after grilling so the basil stays fresh and the glaze does not burn. Burrata may replace the mozzarella in an approximately 8-ounce portion.
