Easy Garlic Steak and Potato Foil Packs

Juicy sirloin steak and tender baby potatoes are seasoned with garlic, Italian seasoning, onion powder, salt, pepper, and olive oil, then baked together in sealed foil packets. This simple dinner is ready in approximately 30 to 40 minutes.

  • 1 lb Sirloin steak, cut into 1-inch cubes
  • 1 lb Baby potatoes, quartered or cut into 1-inch pieces
Seasoning and Garnish
  • 3 tbsp Olive oil, divided
  • 1 tbsp Minced garlic, about 3 cloves
  • 1 tsp Italian seasoning
  • 1 tsp Onion powder
  • 1 tsp Kosher salt, or to taste
  • 1/2 tsp Black pepper, or to taste
  • 2 tbsp Fresh parsley, chopped

Method
 

Step-by-Step
  1. Heat the oven to 425°F and tear off four large sheets of heavy-duty aluminum foil. Place the sheets on your work surface so the seasoned steak and potatoes can be divided evenly.
  2. Cut the sirloin into 1-inch cubes and cut the baby potatoes into similarly sized pieces. Quarter very small potatoes and halve or quarter larger ones so the potatoes cook at the same rate as the steak.
  3. Toss the potatoes with 1 tablespoon olive oil, minced garlic, Italian seasoning, onion powder, kosher salt, and black pepper. Add the steak and remaining 2 tablespoons olive oil, then toss until every piece is evenly coated.
  4. Divide the steak and potato mixture among the four foil sheets, keeping the portions near the center. Fold the foil over the food and crimp the edges tightly to form sealed packets.
  5. Place the sealed packets on a rimmed baking sheet and bake for 20 to 25 minutes. Check that the potatoes are fork-tender and use an instant-read thermometer to check the steak for your preferred doneness.
  6. Open each packet carefully because hot steam will escape. Let the steak rest for a few minutes, garnish with chopped parsley, and serve immediately.

Notes

Cut potatoes no larger than about 1 inch. If the potatoes are firm or larger than baby potatoes, microwave or parboil them for several minutes before assembling. For better browning, briefly open the packets near the end of cooking or transfer the contents to a hot skillet. The steak may continue cooking after the packets come out of the oven, so avoid overcooking.
