- Heat the oven to 425°F (220°C). Line a large baking sheet with parchment if desired for easier cleanup.
- Trim the dry ends from the broccolini and split any especially thick stems lengthwise. Rinse it well and dry it very thoroughly before seasoning.
- Place the broccolini in a large bowl and toss with the olive oil, minced garlic, kosher salt, black pepper, and red-pepper flakes if using. Make sure the oil and seasonings coat the stems and florets evenly.
- Spread the broccolini in a single layer on the prepared baking sheet. Leave space between the pieces so hot air can circulate and the vegetables roast instead of steam.
- Roast for 10 to 15 minutes, turning once, until the stems are tender and the florets are lightly browned. Very thick broccolini may need 16 to 18 minutes.
- Sprinkle the hot broccolini with the finely grated Parmesan and finish with lemon juice just before serving. Toss gently or leave the cheese scattered over the top.
Notes
Dry the broccolini thoroughly and avoid crowding the pan for the best browning. Add Parmesan near the end or immediately after roasting for a cleaner garlic-and-cheese flavor and better texture.
