Easy Garlic Herb Shrimp Recipe

  • 1 pound Large shrimp, peeled and deveined; 21–25 shrimp per pound
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 4 cloves Garlic, finely minced
Seasonings
  • 1 teaspoon Italian seasoning, or a mixture of dried oregano and basil
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Freshly ground black pepper
Finishing Ingredients
  • 2 tablespoons Fresh lemon juice, from about 1/2 lemon
  • 2 tablespoons Fresh parsley, chopped
Optional Ingredients
  • 1/4 cup Dry white wine or chicken stock
  • 1 pinch Red pepper flakes

Method
 

Step-by-Step
  1. Pat the shrimp dry with paper towels. If using frozen shrimp, thaw them completely, then remove the shells and vein.
  2. Season the shrimp with kosher salt, black pepper, and Italian seasoning.
  3. Heat the olive oil and butter in a large skillet over medium-high heat.
  4. Add the garlic and cook for about 30 seconds, just until fragrant; do not let it brown.
  5. Add the shrimp in a single layer. Cook for about 2 minutes on the first side and 1–2 minutes on the second side, turning once.
  6. Add the lemon juice and optional wine or chicken stock. Simmer for 1–2 minutes while scraping up browned bits from the pan.
  7. Remove the skillet from the heat and stir in the parsley. Serve immediately with the pan juices.

Notes

Patting the shrimp dry helps them sear instead of steam. If the skillet is crowded, cook in batches. Remove the shrimp as soon as they are pink, opaque, and curled into a loose C shape; tightly curled shrimp are usually overcooked.
