  • 1 lb Fresh green beans, trimmed
  • 1-2 tbsp Extra-virgin olive oil
  • 3 cloves Garlic, finely minced
  • 1 cup Cherry or grape tomatoes, halved
Seasoning
  • 1/2 tsp Kosher salt, plus more for blanching water
  • 1/4 tsp Freshly ground black pepper
Optional Finish
  • 1 tbsp Fresh parsley or basil, chopped
  • 1 tsp Fresh lemon juice

Step-by-Step
  1. Trim the stem ends from the green beans. Bring a large pot of generously salted water to a boil.
  2. Blanch the beans for 3-4 minutes, until bright green and just tender. Drain, then rinse under cold water or transfer them to ice water to stop the cooking; drain thoroughly.
  3. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for about 30 seconds, just until fragrant, without allowing it to brown.
  4. Add the tomatoes, 1/2 teaspoon kosher salt, and black pepper. Cook for 2-3 minutes, until the tomatoes begin to soften.
  5. Add the green beans and toss to coat. Cook for 4-6 minutes, until hot and tender-crisp, then finish with chopped herbs and lemon juice if desired.

Notes

Dry the blanched beans thoroughly before adding them to the skillet to prevent oil splatter. Store leftovers in a covered container in the refrigerator and reheat gently in a skillet or microwave.
