- Trim the stem ends from the green beans. Bring a large pot of generously salted water to a boil.
- Blanch the beans for 3-4 minutes, until bright green and just tender. Drain, then rinse under cold water or transfer them to ice water to stop the cooking; drain thoroughly.
- Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for about 30 seconds, just until fragrant, without allowing it to brown.
- Add the tomatoes, 1/2 teaspoon kosher salt, and black pepper. Cook for 2-3 minutes, until the tomatoes begin to soften.
- Add the green beans and toss to coat. Cook for 4-6 minutes, until hot and tender-crisp, then finish with chopped herbs and lemon juice if desired.
Notes
Dry the blanched beans thoroughly before adding them to the skillet to prevent oil splatter. Store leftovers in a covered container in the refrigerator and reheat gently in a skillet or microwave.
