- Heat the oven to 425°F, or preheat a grill to medium-high, approximately 400–450°F. Prepare four large sheets of heavy-duty foil and add parchment paper inside each sheet if desired.
- Lightly coat the foil with cooking spray. Place the cubed steak and potatoes in a large bowl, then add melted butter, minced garlic, Italian seasoning, paprika, salt, and pepper.
- Toss until the steak and potatoes are evenly coated. Add the bell pepper and red onion if using, and mix gently so the vegetables are covered with the garlic butter.
- Divide the mixture evenly among the four foil sheets, placing the ingredients in the center. Fold each sheet into a tightly sealed packet while leaving a little room inside for steam.
- Place the packets on a baking sheet and bake for 20–25 minutes, or grill for 15–20 minutes, turning once during grilling.
- Carefully open one packet away from your face to check the potatoes. They should be fork-tender, and the steak should reach the desired doneness; for food safety, beef should reach at least 145°F followed by a three-minute rest.
- Garnish the hot packets with chopped parsley and serve immediately. Add lemon juice or extra melted garlic butter if desired.
Notes
Cut the potatoes smaller than the steak when necessary because potatoes need more time to cook. Use heavy-duty foil and a double layer when grilling. Open packets carefully because the steam is very hot. For very tender potatoes or a shorter oven cook, parboil or microwave them for 4–6 minutes before assembling.
