Easy Garlic Butter Scallops Recipe

Golden-seared sea scallops are finished in a fragrant garlic butter sauce with fresh lemon and parsley. This quick seafood dinner takes about 20 minutes from start to finish and serves four.

Ingredients
  

Scallops
  • 1 pound (450 g) Large sea scallops, preferably dry-packed
  • 1/2 teaspoon, plus more as needed Kosher salt
  • 1/4 teaspoon Freshly ground black pepper
For Searing
  • 1 tablespoon Olive oil
For Searing and Sauce
  • 3 tablespoons Unsalted butter, divided
Garlic Butter Sauce
  • 4 cloves Garlic, finely minced
  • 2 tablespoons Fresh lemon juice
Garnish
  • 2 tablespoons Fresh parsley, chopped
  • As needed for serving Lemon wedges
Optional Sauce Addition
  • 1/4 cup Dry white wine or seafood stock

Method
 

Step-by-Step
  1. Pat the scallops exceptionally dry with paper towels. Remove the small side muscle if it remains attached, then season both sides with kosher salt and freshly ground black pepper.
  2. Heat the olive oil and 1 tablespoon of the butter in a large skillet over medium-high to high heat until hot. Arrange the scallops in a single layer with space between them.
  3. Sear the scallops without moving them for about 2-3 minutes, until the first side is deeply golden. Turn them and cook for another 1-2 minutes, until the centers are just opaque and the scallops feel slightly firm.
  4. Transfer the cooked scallops to a plate. Reduce the heat to medium and add the remaining 2 tablespoons of butter to the skillet.
  5. Add the minced garlic and cook for 30-60 seconds, stirring often, just until fragrant. Do not let the garlic brown heavily.
  6. Stir in the lemon juice. If using dry white wine or seafood stock, add it before the lemon juice and simmer for 1-2 minutes so it reduces slightly.
  7. Return the scallops briefly to the pan and spoon the garlic butter sauce over them. Sprinkle with chopped parsley and serve immediately with lemon wedges.

Notes

Dry scallops are essential for a browned crust instead of a steamed surface. Avoid overcrowding the skillet; cook in batches if necessary. Do not overcook, because scallops become rubbery past the point where their centers are just opaque.
