- Pat the pork chops dry with paper towels. Season both sides with kosher salt, black pepper, and Italian seasoning or dried thyme.
- Heat olive oil in a large heavy skillet over medium-high heat. Add the chops and sear for about 3 to 5 minutes per side, depending on thickness, until deeply browned.
- Reduce the heat to medium or medium-low. Add 2 tablespoons of butter and the minced garlic, then cook for 30 to 60 seconds while stirring so the garlic stays fragrant rather than burnt.
- Add the remaining butter and optional chicken broth. Spoon the foaming garlic butter over the pork chops as they continue cooking.
- Cook until the thickest part of each chop reaches 145°F (63°C) on an instant-read thermometer. Remove the skillet from the heat and rest the pork for 3 minutes.
- Finish with chopped parsley and optional lemon juice. Serve immediately with the garlic butter pan sauce spooned over the chops.
