Ingredients

Main Ingredients
  • 3 large firm apples, such as Granny Smith, Honeycrisp, or Pink Lady
Funnel Cake Batter
  • 1 1/2 cups (188 g) all-purpose flour
  • 1/4 cup (50 g) granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon fine salt
  • 1 large egg
  • 1 cup (240 ml) whole milk
  • 1 teaspoon vanilla extract
For Frying and Serving
  • 4-6 cups, or enough for 2 inches in the pot vegetable or canola oil
  • as needed powdered sugar
Optional Finish
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • as desired caramel sauce

Method

Step-by-Step
  1. Peel the apples, remove the cores, and cut them into sticks or wedges about 1/2 inch thick. Pat every piece very dry with paper towels.
  2. Whisk the flour, granulated sugar, baking powder, and salt in a medium bowl. In a second bowl, whisk the egg, whole milk, and vanilla extract.
  3. Add the wet ingredients to the dry ingredients and whisk just until combined. The batter should be thick enough to coat the apples while remaining pourable, so avoid overmixing.
  4. Heat 2 inches of vegetable or canola oil to 350°F (175°C) in a deep, heavy-bottomed pot. Keep the oil between 340°F and 350°F while frying.
  5. Dip each apple piece in the batter, allowing excess to drip off. Carefully place the coated apples in the hot oil in small batches.
  6. Fry for approximately 2–3 minutes per side, turning once, until puffed and golden brown. Transfer the apple fries to a paper-towel-lined rack or plate.
  7. Dust the warm apple fries with powdered sugar, or toss them lightly in cinnamon sugar made with 1/4 cup granulated sugar and 1 teaspoon ground cinnamon. Serve with caramel sauce if desired.

Notes

Use firm, slightly tart apples and dry them thoroughly before dipping. Fry in small batches so the oil stays between 340°F and 350°F. These apple fries are best served warm.
