Easy Fried Cabbage With Sausage

  • 1 pound Smoked sausage or kielbasa, sliced into 1/4-inch rounds
  • 1 medium head, about 2 pounds Medium green cabbage, cored and chopped into 1-inch pieces
  • 1 medium Yellow onion, thinly sliced or chopped
  • 2 cloves Garlic, minced
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Vegetable oil or olive oil
  • 1/2 cup Chicken broth or water
Seasonings
  • 1 teaspoon, or to taste Kosher salt
  • 1/2 teaspoon Black pepper
  • 1/2 teaspoon Smoked paprika or sweet paprika
  • 1/4 teaspoon, optional Red pepper flakes
Finishing
  • 1 teaspoon, optional Apple cider vinegar

Method
 

Step-by-Step
  1. Core and chop the cabbage into bite-size pieces. Slice the sausage into 1/4-inch rounds, chop or thinly slice the onion, and mince the garlic.
  2. Heat the oil and 1 tablespoon of butter in a large skillet or Dutch oven over medium-high heat. Add the sausage and cook for 4 to 6 minutes, turning occasionally, until browned; transfer it to a plate if the pan is crowded.
  3. Add the onion to the same pan and cook for 3 to 4 minutes, until softened. Add the remaining butter and garlic, cooking for about 30 seconds until fragrant.
  4. Add the cabbage, broth or water, salt, black pepper, paprika, and red pepper flakes. Toss well, cover, and cook for 8 to 10 minutes, stirring once or twice.
  5. Uncover and continue cooking for 8 to 12 minutes, stirring occasionally, until most of the liquid has evaporated and the cabbage is tender with lightly browned edges.
  6. Return the sausage to the skillet and cook for 2 to 3 minutes more. Taste and adjust the seasoning, then stir in the apple cider vinegar if using.

Notes

Brown the sausage first so its rendered fat and browned bits season the skillet. Do not overcook the cabbage. Refrigerate leftovers in an airtight container for up to 3 days and reheat gently in a skillet or microwave.
