Easy Fresh Cherry Tomato Sauce Recipe

A quick rustic tomato sauce made with sweet cherry tomatoes, olive oil, garlic, and fresh basil. Serve it with pasta, crusty bread, vegetables, or your favorite protein.

Ingredients
  

Tomato Sauce
  • 2 pints, about 1½ pounds Cherry or grape tomatoes
  • 2 tablespoons Extra-virgin olive oil
  • 2–3 cloves Garlic, thinly sliced or minced
  • ½ teaspoon, plus more to taste Kosher salt
  • ¼ teaspoon, optional Red-pepper flakes
  • ¼ teaspoon, optional Freshly ground black pepper
  • ¼ cup, plus more for serving Fresh basil leaves, torn
To Finish
  • 2–4 tablespoons Water, if needed
Serving
  • 12 ounces, optional Pasta
  • ¼ cup, optional Finely grated Parmesan or Pecorino

Method
 

Step-by-Step
  1. Rinse the tomatoes and remove any stems. Leave them whole, or halve larger cherry tomatoes.
  2. Warm the olive oil in a large skillet over medium heat. Add the garlic and optional red-pepper flakes, cooking for 30–60 seconds until fragrant without browning the garlic.
  3. Add the tomatoes, kosher salt, and optional black pepper. Stir to coat the tomatoes in the seasoned oil.
  4. Cook uncovered for 12–18 minutes, stirring occasionally, until the tomatoes soften, split, and release their juices.
  5. Gently crush some tomatoes with the back of a spoon or a potato masher, leaving some pieces intact for a rustic texture. Simmer for another 2–5 minutes, adding water if the sauce becomes too thick.
  6. Stir in the basil, taste, and adjust the salt and pepper. Toss the sauce with hot pasta and finish with Parmesan or Pecorino if desired.

Notes

Reserve at least ½ cup pasta water before draining pasta. Add a splash while tossing if the sauce needs loosening or extra cling. Store cooled sauce in the refrigerator and reheat gently.
