  • 1 8-ounce container Frozen whipped topping, thawed
  • 2 cups Miniature marshmallows
  • 1/2 cup Sweetened shredded coconut

  • 1/2 cup Chopped pecans or walnuts
  • As needed Maraschino cherries for garnish

Step-by-Step
  1. Add the undrained crushed pineapple and dry instant vanilla pudding mix to a large mixing bowl.
  2. Stir the pineapple and pudding mix until the dry powder is fully incorporated and the mixture begins to thicken.
  3. Fold in the thawed whipped topping gently, using a spatula and a light motion to preserve the airy texture.
  4. Fold in the miniature marshmallows, sweetened shredded coconut, and chopped pecans or walnuts if using.
  5. Cover the bowl and refrigerate for at least 1 hour. Chill for 2 hours when possible so the marshmallows soften and the salad becomes fluffier.
  6. Garnish with maraschino cherries or extra coconut immediately before serving.

Notes

Do not drain the pineapple because the juice hydrates the pudding mix and provides the moisture needed for the correct consistency. Fold rather than vigorously stir, and add the nuts shortly before serving if you want them to stay crisp. Store covered in the refrigerator.
