- Dice the watermelon and cucumber into small, fairly uniform pieces. Finely chop the red onion and cilantro, and seed and mince the jalapeño.
- For a less watery salsa, place the diced watermelon and cucumber in a strainer for several minutes. Gently drain away excess liquid without pressing or crushing the fruit.
- Combine the drained watermelon and cucumber with the red onion, jalapeño, and cilantro in a mixing bowl.
- Add the lime juice, kosher salt, optional black pepper, and optional honey or sugar. Fold gently with a large spoon so the watermelon keeps its shape.
- Taste and adjust the lime juice, salt, and jalapeño to suit your preferences. Serve right away or refrigerate for about 30 minutes before serving.
Notes
Remove the jalapeño seeds and ribs for milder salsa, or leave some in for more heat. Drain the watermelon and cucumber to reduce excess liquid, and avoid preparing the salsa too far in advance because the fruit releases more juice as it sits.
