  • 1 cup Sour cream
  • 1 packet, about 1 ounce Taco seasoning
  • 1 cup Chunky salsa
  • 1 15-ounce can Black beans, drained and rinsed
  • 1 15-ounce can Corn, drained
  • 1 cup Shredded Mexican-blend cheese or cheddar cheese
Optional Toppings
  • 2 green onions Green onions, sliced
  • 1/4 cup Fresh cilantro, chopped
  • 1 jalapeño Jalapeño, finely chopped

Method
 

Step-by-Step
  1. Allow the cream cheese to soften fully at room temperature. In a large bowl, beat or stir together the cream cheese, sour cream, and taco seasoning until smooth and evenly combined.
  2. Fold in the chunky salsa, drained black beans, and drained corn. Mix gently so the beans remain mostly whole and the dip stays pleasantly textured.
  3. For a chilled dip, spread the mixture into a shallow serving dish, sprinkle the shredded cheese over the top, add any desired toppings, cover, and refrigerate for at least 30 minutes. For a hot dip, transfer the mixture to a baking dish, reserve the cheese for the top, and bake at 350°F for 20 to 25 minutes until hot and bubbly.

Notes

Drain the salsa, beans, and corn very well to prevent a thin dip. For a cold version, refrigerate for 30 minutes to 1 hour so the flavors develop. If baking, cook only until the cheese melts and the edges bubble so the dip does not dry out.
