- Allow the cream cheese to soften fully at room temperature. In a large bowl, beat or stir together the cream cheese, sour cream, and taco seasoning until smooth and evenly combined.
- Fold in the chunky salsa, drained black beans, and drained corn. Mix gently so the beans remain mostly whole and the dip stays pleasantly textured.
- For a chilled dip, spread the mixture into a shallow serving dish, sprinkle the shredded cheese over the top, add any desired toppings, cover, and refrigerate for at least 30 minutes. For a hot dip, transfer the mixture to a baking dish, reserve the cheese for the top, and bake at 350°F for 20 to 25 minutes until hot and bubbly.
Notes
Drain the salsa, beans, and corn very well to prevent a thin dip. For a cold version, refrigerate for 30 minutes to 1 hour so the flavors develop. If baking, cook only until the cheese melts and the edges bubble so the dip does not dry out.
