  • 2 pounds Fresh carrots, peeled and cut into sticks or 1/4-inch slices
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Fresh dill, finely chopped
  • 1/2 teaspoon, or to taste Kosher salt
  • 1/4 teaspoon Black pepper

Method
 

Step-by-Step
  1. Peel the carrots and cut them into evenly sized sticks or 1/4-inch slices.
  2. Place the carrots in a saucepan with about 1 inch of water and a pinch of salt. Cover and steam for 8–10 minutes until tender-crisp, or boil in salted water for about 8–12 minutes.
  3. Drain the carrots thoroughly and return them to the warm pan.
  4. Add the butter, chopped dill, kosher salt, and black pepper. Toss gently until the butter melts and coats the carrots.
  5. Taste and adjust the seasoning, then serve hot.

Notes

Do not overcook the carrots; they should be tender but still hold their shape. Add dill after cooking to preserve its fresh flavor and color, and drain the carrots well so the finished dish is not watery. For a dried herb option, use approximately 2 teaspoons dried dill.
