Easy Crustless Spinach and Ham Quiche

A savory, crustless quiche made with spinach, cooked ham, eggs, milk or half-and-half, onion, and shredded cheese. It is simple enough for a weeknight meal and special enough for a relaxed brunch.

  • 10 ounces Frozen chopped spinach, thawed and squeezed very dry
  • 1 cup Diced cooked ham
  • 1 cup Shredded Swiss, cheddar, Monterey Jack, or a combination
  • 6 eggs Large eggs
  • 1 cup Whole milk or half-and-half
  • 1/4 cup Finely chopped onion
Seasonings
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Ground black pepper
  • 1/4 teaspoon Ground nutmeg, optional
For Cooking
  • 1 tablespoon Butter or olive oil
  • as needed Nonstick cooking spray or butter for greasing

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C) and grease a 9-inch pie plate or quiche dish.
  2. Sauté the finely chopped onion in butter or olive oil over medium heat for 3–5 minutes, until softened. Let it cool slightly.
  3. Thaw the frozen spinach and press or squeeze it very dry to remove as much liquid as possible.
  4. Scatter the spinach, diced ham, softened onion, and about three-quarters of the shredded cheese in the prepared dish.
  5. Whisk the eggs, milk or half-and-half, salt, pepper, and optional nutmeg until well combined. Pour the custard over the filling and sprinkle the remaining cheese on top.
  6. Bake for 35–40 minutes, until the center is set and a knife inserted near the middle comes out mostly clean. The internal temperature should be about 160°F. Rest for 5–10 minutes before slicing.

Notes

Squeeze the spinach very dry to prevent a watery quiche. Remove the dish while the center still has a slight jiggle because it will continue cooking as it rests. Store leftovers covered in the refrigerator and reheat gently.
