- Wash and chop the vegetables, cutting the potatoes into pieces no larger than 1 inch so they cook evenly.
- Add the onion, carrots, celery, garlic, potatoes, green beans, corn, peas, and diced tomatoes with their juices to a 6-quart slow cooker.
- Pour in the vegetable broth, then add the Italian seasoning, salt, black pepper, bay leaf, and tomato paste if using. Stir briefly to distribute the ingredients.
- Cover and cook on Low for 6–8 hours or High for 3–4 hours, until the potatoes and carrots are tender when pierced with a fork.
- Remove the bay leaf and taste the soup carefully. Adjust the salt and pepper, then stir in the fresh parsley just before serving if desired.
Notes
For a thicker soup, mash a few cooked potato pieces against the side of the slow cooker before serving. Keep the vegetables mostly submerged, avoid overfilling the slow cooker, and taste after cooking because potatoes and unsalted broth can dilute the initial seasoning.
