- Wash the cauliflower and cut it into evenly sized florets. Dice the onion and peeled Yukon Gold potato into pieces that will cook at the same rate.
- Add the cauliflower, onion, garlic, potato, vegetable broth, dried thyme, bay leaf, kosher salt, and black pepper to the slow cooker. Stir briefly to distribute the seasonings.
- Cover and cook for 4–5 hours on HIGH or 6–8 hours on LOW, until the cauliflower and potato are very tender when pierced with a fork.
- Remove and discard the bay leaf. Blend the soup with an immersion blender until smooth, or carefully blend it in batches in a countertop blender with a way for steam to escape.
- Stir in the coconut milk or plant milk, lemon juice, and nutritional yeast if using. Taste and adjust the salt, pepper, and acidity before serving hot.
Notes
Add full-fat canned coconut milk after blending rather than at the beginning for fresher flavor and a lower chance of separation. If the soup becomes too thick, stir in a little extra broth. For a textured soup, blend only about three-quarters of the batch.
