Easy Crockpot Vegan Cauliflower Soup

A creamy dairy-free cauliflower soup made in the slow cooker with onion, garlic, potato, herbs, plant milk, and a bright finish of lemon juice. It is simple enough for a weeknight and cozy enough for a relaxed weekend lunch.

  • 1 large head, about 2 pounds 900 g Cauliflower, cut into evenly sized florets
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic, minced
  • 4 cups Low-sodium vegetable broth
  • 1 medium Yukon Gold potato, peeled and diced
Seasonings
  • 1 teaspoon Dried thyme
  • 1 leaf Bay leaf
  • 1 teaspoon, plus more to taste Kosher salt
  • 1/2 teaspoon Freshly ground black pepper
Finishing Ingredients
  • 1/2 cup Canned full-fat coconut milk or unsweetened plant milk
  • 1 tablespoon Fresh lemon juice
  • 2 tablespoons Nutritional yeast, optional

Method
 

Step-by-Step
  1. Wash the cauliflower and cut it into evenly sized florets. Dice the onion and peeled Yukon Gold potato into pieces that will cook at the same rate.
  2. Add the cauliflower, onion, garlic, potato, vegetable broth, dried thyme, bay leaf, kosher salt, and black pepper to the slow cooker. Stir briefly to distribute the seasonings.
  3. Cover and cook for 4–5 hours on HIGH or 6–8 hours on LOW, until the cauliflower and potato are very tender when pierced with a fork.
  4. Remove and discard the bay leaf. Blend the soup with an immersion blender until smooth, or carefully blend it in batches in a countertop blender with a way for steam to escape.
  5. Stir in the coconut milk or plant milk, lemon juice, and nutritional yeast if using. Taste and adjust the salt, pepper, and acidity before serving hot.

Notes

Add full-fat canned coconut milk after blending rather than at the beginning for fresher flavor and a lower chance of separation. If the soup becomes too thick, stir in a little extra broth. For a textured soup, blend only about three-quarters of the batch.
