- Pat both sides of the pork chops dry with paper towels. Season both sides evenly with the garlic powder, salt, and black pepper.
- Arrange the seasoned pork chops in the crockpot in a single layer when possible. A little overlap is fine, but keeping the chops spread out helps the sauce surround each piece.
- Whisk the condensed cream of chicken soup, pork gravy mix, and chicken broth together in a bowl until smooth. Pour the sauce over the pork chops, making sure the tops are coated.
- Cover the crockpot and cook on LOW for 6–7 hours or HIGH for 3–4 hours. The pork should be tender and cooked through, with a center temperature of at least 145°F for food safety.
- Spoon the warm gravy over the chops before serving. Pair with mashed potatoes, rice, or egg noodles so every bite can be enjoyed with the creamy sauce.
Notes
Lean boneless pork chops can become dry if cooked substantially longer than necessary, so begin checking toward the shorter end of the cooking range. For extra flavor, briefly brown the chops in a hot skillet before placing them in the crockpot. Cream of mushroom soup, sliced onion, or a dry onion-soup mix can be used as common variations.
