Easy Crockpot Mac and Cheese Recipe

Creamy slow-cooker macaroni and cheese made with evaporated milk, whole milk, sour cream, sharp cheddar, and mozzarella or Monterey Jack. The uncooked pasta cooks directly in the crockpot for an easy family-friendly side dish.

  • 16 ounces, about 4 cups Uncooked elbow macaroni
  • 4 tablespoons, melted or cut into pieces Unsalted butter
  • 3 cups Sharp cheddar cheese, shredded
  • 1 cup Mozzarella or Monterey Jack cheese, shredded
Dairy
  • 12 ounces Evaporated milk
  • 1 1/2 cups Whole milk
  • 1/2 cup Sour cream
Seasonings
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1/2 or 1 teaspoon dry mustard or teaspoon prepared mustard, optional Dry mustard or prepared mustard

Method
 

Step-by-Step
  1. Coat the inside of a 5- or 6-quart slow cooker with butter or nonstick cooking spray. This helps prevent sticking and makes serving and cleanup easier.
  2. Add the uncooked elbow macaroni, melted butter, evaporated milk, whole milk, sour cream, salt, black pepper, and optional mustard to the slow cooker. Stir until the pasta is coated and the dairy mixture is distributed throughout.
  3. Stir in the shredded sharp cheddar and mozzarella or Monterey Jack. Reserve a small handful of cheese for sprinkling over the top if desired.
  4. Cover and cook on LOW for about 2 to 3 hours, stirring once or twice during cooking. Begin checking at the 2-hour mark because slow cookers vary in temperature.
  5. When the macaroni is tender and the cheese sauce is creamy, switch the slow cooker to WARM. Serve immediately, since extended cooking can make the pasta too soft and cause the sauce to become oily.

Notes

Shred cheese from a block for the smoothest sauce. Do not cook past the point at which the macaroni is tender. Refrigerate leftovers promptly and reheat gently with a splash of milk.
