Easy Crockpot Loaded Potatoes Recipe

Tender slow-cooked potatoes are folded with sour cream, milk, sharp cheddar, bacon, and green onions for a cozy loaded potato side dish. This recipe makes 6–8 servings and finishes with a bubbling layer of melted cheese.

  • 3 pounds Small red or Yukon Gold potatoes, quartered or cut into 1-inch chunks
  • 8 ounces Bacon, cooked crisp and crumbled
  • 1 1/2 cups Sharp cheddar cheese, shredded and divided
  • 1/2 cup Sour cream
  • 1/4 cup Milk
  • 3 green onions Green onions, thinly sliced
  • 2 tablespoons Butter, melted
Seasonings
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Black pepper
  • 1/2 teaspoon Garlic powder
Garnish
  • 2 tablespoons, optional Fresh chives, chopped

Method
 

Step-by-Step
  1. Cook the bacon until crisp. Drain, cool, and crumble it into small pieces.
  2. Grease a 5- to 6-quart slow cooker. Add the potatoes and toss them with melted butter, kosher salt, black pepper, and garlic powder.
  3. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until the potatoes are easily pierced with a fork.
  4. Stir in about 1 cup of the cheddar, the sour cream, milk, half of the bacon, and half of the sliced green onions.
  5. Sprinkle the remaining cheddar and bacon over the top. Cover for 10–15 minutes, until the cheese melts.
  6. Garnish with the remaining green onions or optional chopped chives and serve hot.

Notes

Cut the potatoes to a similar size so they cook evenly. Add sour cream and most of the cheese near the end to help prevent separation and an oily texture. The potatoes generally need no broth; if using very large, dense pieces, add 2–3 tablespoons of milk or broth to prevent dry edges. Avoid cooking far beyond tenderness because the potatoes may become mushy.
